Ingredients
  

Main Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 packet taco seasoning or homemade mix
  • 1 tsp red pepper flakes adjust to spice preference
  • 1 can diced tomatoes with green chilies 14 oz, with juices
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can kidney beans 15 oz, drained and rinsed
  • 2 cups beef broth
  • 1 cup corn kernels fresh or frozen
  • 1 lime juiced

Toppings (Optional)

  • shredded cheese
  • sour cream
  • fresh cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef and cook until browned, breaking it up as it cooks.
  • Stir in diced onion and garlic. Cook for 3 minutes until softened.
  • Add taco seasoning and red pepper flakes, stirring to coat the meat.
  • Pour in diced tomatoes, black beans, kidney beans, and beef broth. Bring to a simmer.
  • Add corn and simmer for 15 minutes, stirring occasionally.
  • Stir in fresh lime juice and adjust seasoning to taste.
  • Serve hot with your favorite toppings like cheese, sour cream, and fresh cilantro.

Notes

For extra heat, add diced jalapeƱos or hot sauce. Serve with tortilla chips for a crunchy finish!
