Ingredients
  

Main Ingredients

  • 1 tbsp olive oil
  • 12 oz smoked sausage sliced
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth low sodium preferred
  • 1 can diced tomatoes 14 oz, with juices
  • 1 can white beans drained and rinsed
  • 4 cups collard greens chopped
  • 1 tsp paprika
  • 1/2 tsp black pepper to taste
  • 1/2 tsp salt or to taste
  • 1/4 tsp red pepper flakes optional, for heat

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sliced sausage and cook for 3-4 minutes until browned. Remove and set aside.
  • Add diced onion and garlic to the pot. Sauté until onions are soft, about 3 minutes.
  • Pour in chicken broth and diced tomatoes. Stir to combine.
  • Return the sausage to the pot and add white beans, collard greens, paprika, black pepper, salt, and red pepper flakes (if using).
  • Simmer for 20 minutes until flavors meld and greens are tender.
  • Serve hot and enjoy!

Notes

For a richer flavor, use smoked turkey or ham instead of sausage. You can also substitute kale or spinach for collard greens.
