Instructions
Heat olive oil in a large pot over medium heat.
Add sliced sausage and cook for 3-4 minutes until browned. Remove and set aside.
Add diced onion and garlic to the pot. Sauté until onions are soft, about 3 minutes.
Pour in chicken broth and diced tomatoes. Stir to combine.
Return the sausage to the pot and add white beans, collard greens, paprika, black pepper, salt, and red pepper flakes (if using).
Simmer for 20 minutes until flavors meld and greens are tender.
Serve hot and enjoy!
Notes
For a richer flavor, use smoked turkey or ham instead of sausage. You can also substitute kale or spinach for collard greens.
