Ingredients
  

Piña Colada Base

  • 1 cup fresh strawberries hulled and sliced
  • 1 cup pineapple juice
  • 1 cup coconut cream
  • ½ cup white or coconut rum optional
  • 1 tbsp fresh lime juice
  • 1 cup ice cubes

Malibu Frosting

  • 1 cup whipping cream
  • ¼ cup powdered sugar
  • 2 tbsp Malibu rum or coconut extract for non-alcoholic
  • 2 tbsp cream cheese optional, for extra richness

Instructions
 

  • In a blender, combine strawberries, pineapple juice, coconut cream, rum (if using), lime juice, and ice. Blend until smooth and frothy.
  • In a chilled bowl, whip the cream with powdered sugar until soft peaks form. Add Malibu rum and cream cheese (if using); continue whipping until stiff peaks form.
  • Pour the piña colada mixture into glasses and top with a generous swirl of Malibu frosting. Garnish with fruit or toasted coconut, if desired.

Notes

For a mocktail version, skip the rum and use coconut extract in the frosting. Great for brunch, summer parties, or a tropical dessert in a glass.
