  • 2 tablespoons unflavored gelatin powder
  • 3 cups 100% unsweetened pomegranate juice
  • 1 cinnamon stick
  • 1 whole star anise
  • 2 cardamom pods, lightly crushed
  • 3 tablespoons honey
  • 1/2 cup fresh pomegranate arils
  • 0.5 cup cold water

Instructions
 

  • Place the pomegranate juice, cinnamon stick, star anise, cardamom pods, and honey in a non-reactive saucepan.
  • Simmer over low heat for 8 minutes to infuse the spices.
  • Remove from heat and strain through a fine-mesh sieve into a clean bowl, discarding the spices.
  • In a separate bowl, sprinkle the gelatin powder over 1/2 cup of cold water and let it bloom for 5 minutes.
  • Whisk the bloomed gelatin into the warm, spiced pomegranate liquid until fully dissolved.
  • Pour the mixture evenly into 6 serving cups.
  • Refrigerate for at least 4 hours until fully set.
  • Before serving, garnish each cup with a spoonful of fresh pomegranate arils.

Notes

Ensure the pomegranate juice is cold when mixing if not using the reserved room temperature portion to avoid clumping. You can substitute agar-agar for a vegan alternative to gelatin. Keep refrigerated until ready to serve for the best texture.
