Ingredients
  

Main Components

  • 4 oz grilled salmon
  • ½ cup cooked quinoa
  • 1 cup steamed broccoli
  • ½ medium avocado
  • 2 scrambled eggs
  • 1 slice whole grain toast
  • 1 medium apple
  • 1 oz almonds
  • 1 cup plain Greek yogurt
  • 1 tbsp chia seeds
  • 1 tbsp peanut butter
  • ½ cup low-fat cottage cheese
  • 1 tbsp olive oil
  • 2 cups fresh spinach
  • ½ cup cherry tomatoes
  • ½ cucumber
  • 1 tbsp balsamic vinegar

Instructions
 

  • Grill or sear salmon until cooked through. Season as desired.
  • Cook quinoa and steam broccoli in advance. Scramble eggs and toast the whole grain bread.
  • Slice cucumber, halve cherry tomatoes, and prepare other fresh vegetables and fruit.
  • In a large bowl or plate, arrange spinach as a base. Top with quinoa, salmon, broccoli, scrambled eggs, cottage cheese, and veggies.
  • Serve apple slices, almonds, and toast with peanut butter and Greek yogurt topped with chia seeds on the side.
  • Drizzle olive oil and balsamic vinegar over the bowl before serving.
