Ingredients
  

Main Ingredients

  • ½ cup cooked quinoa
  • ½ grilled chicken breast sliced
  • 1 cup fresh spinach or mixed greens
  • ¼ cup chopped cucumber
  • ¼ cup cherry tomatoes halved
  • 2 tbsp diced red onion
  • ¼ avocado sliced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • to taste salt
  • to taste black pepper

Instructions
 

  • Grill or pan-cook chicken breast until fully cooked. Let rest, then slice.
  • Assemble the bowl: start with spinach or mixed greens, add quinoa and grilled chicken.
  • Top with cucumber, cherry tomatoes, red onion, and avocado slices.
  • Drizzle olive oil and lemon juice over the bowl. Season with salt and pepper to taste.

Notes

This light yet filling bowl is ideal for blood sugar control and satiety. For extra fiber, add a tablespoon of hemp or flax seeds.
