Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the sliced sausage and cook for 3-4 minutes until browned. Remove and set aside.
Add the remaining 1 tablespoon of olive oil to the skillet and add the potatoes. Cook for 10-12 minutes, stirring occasionally, until tender and crispy.
Add the bell peppers and onion. Cook for another 5 minutes until softened.
Return the sausage to the skillet and add garlic powder, paprika, black pepper, Italian seasoning, and salt. Stir everything together and cook for 2 more minutes.
Serve hot and enjoy!
Notes
You can use any type of sausage—smoked, kielbasa, or even chicken sausage. For extra spice, add red pepper flakes!
