Ingredients
  

Main Ingredients

  • 1 lb smoked sausage sliced into rounds
  • 3 cups baby potatoes quartered
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow onion sliced

Seasonings

  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper to taste
  • 1 tsp Italian seasoning optional
  • 1/2 tsp salt to taste

Instructions
 

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the sliced sausage and cook for 3-4 minutes until browned. Remove and set aside.
  • Add the remaining 1 tablespoon of olive oil to the skillet and add the potatoes. Cook for 10-12 minutes, stirring occasionally, until tender and crispy.
  • Add the bell peppers and onion. Cook for another 5 minutes until softened.
  • Return the sausage to the skillet and add garlic powder, paprika, black pepper, Italian seasoning, and salt. Stir everything together and cook for 2 more minutes.
  • Serve hot and enjoy!

Notes

You can use any type of sausage—smoked, kielbasa, or even chicken sausage. For extra spice, add red pepper flakes!
