Main Ingredients

  • 1 tbsp unsalted butter plus more for greasing the pan
  • 4 pieces prepared biscuit dough about 8 ounces
  • 8 oz breakfast sausage casings removed
  • 1 cup half-and-half
  • 1 large egg
  • 1 large egg yolk
  • 1 scallion sliced, optional
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper
  • 2 oz white Cheddar or Monterey Jack cheese shredded (about ½ cup)

Instructions
 

  • Preheat oven to 375°F (190°C). Butter a 9-inch pie dish.
  • Flatten biscuit dough pieces and press them into the bottom and sides of the prepared pie dish to form a crust.
  • In a skillet, melt butter and cook sausage over medium heat until browned and crumbled. Remove from heat.
  • In a bowl, whisk together half-and-half, egg, egg yolk, salt, pepper, and scallions (if using).
  • Spread sausage evenly over the biscuit crust. Pour egg mixture over the sausage. Top with shredded cheese.
  • Bake for 25–30 minutes, or until filling is set and top is golden. Let cool slightly before slicing.

Notes

Customize by adding sautéed peppers or mushrooms to the filling. Leftovers reheat well for an easy weekday breakfast.
