  • 1 tbsp olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 1 tsp turmeric ground
  • 1/2 tsp black pepper for metabolism boost
  • 4 cups vegetable broth low-sodium
  • 1 cup kale chopped
  • 1 cup zucchini chopped
  • 1 tsp apple cider vinegar for digestion support

Instructions
 

  • Heat olive oil in a large pot over medium heat. Sauté onions, garlic, carrots, and celery until softened.
  • Add turmeric and black pepper, stirring for 1 minute to activate flavors.

  • Simmer for 15 minutes or until vegetables are tender.
  • Remove from heat and stir in apple cider vinegar. Adjust seasoning with salt and pepper.
