Instructions
Cook the macaroni according to package instructions. Drain and set aside.
In a saucepan over medium heat, melt the butter.
Whisk in the flour and cook for 1-2 minutes until lightly golden.
Slowly pour in the milk, whisking constantly to avoid lumps.
Cook until the sauce thickens, about 5 minutes.
Stir in the shredded cheddar cheese, salt, pepper, and paprika (if using) until smooth.
Add the cooked macaroni to the cheese sauce and stir to coat.
Optional: Transfer to a baking dish, sprinkle with breadcrumbs, and bake at 375°F (190°C) for 15 minutes until golden brown.
Serve hot and enjoy!
Notes
For a richer sauce, add a splash of heavy cream. You can also mix in cooked bacon, jalapeños, or extra cheeses like gouda or mozzarella!
