Ingredients
  

Pasta

  • 2 cups elbow macaroni

Cheese Sauce

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups milk whole or 2%
  • 2 cups cheddar cheese shredded
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/2 tsp paprika optional, for extra flavor

Topping (Optional)

  • 1/2 cup breadcrumbs for baking option

Instructions
 

  • Cook the macaroni according to package instructions. Drain and set aside.
  • In a saucepan over medium heat, melt the butter.
  • Whisk in the flour and cook for 1-2 minutes until lightly golden.
  • Slowly pour in the milk, whisking constantly to avoid lumps.
  • Cook until the sauce thickens, about 5 minutes.
  • Stir in the shredded cheddar cheese, salt, pepper, and paprika (if using) until smooth.
  • Add the cooked macaroni to the cheese sauce and stir to coat.
  • Optional: Transfer to a baking dish, sprinkle with breadcrumbs, and bake at 375°F (190°C) for 15 minutes until golden brown.
  • Serve hot and enjoy!

Notes

For a richer sauce, add a splash of heavy cream. You can also mix in cooked bacon, jalapeños, or extra cheeses like gouda or mozzarella!
