Ingredients
  

Main Ingredients

  • 1 lb shrimp peeled and deveined
  • 1 lemon juice and zest
  • 1/4 cup olive oil
  • 1–2 tbsp dried oregano adjust to taste
  • to taste salt
  • to taste black pepper
  • a pinch red pepper flakes optional

Instructions
 

  • In a mixing bowl, combine olive oil, lemon juice and zest, oregano, salt, pepper, and red pepper flakes if using.
  • Add shrimp to the marinade, toss to coat well, and let sit for at least 15 minutes.
  • Heat a skillet or grill over medium-high heat. Cook shrimp for 2–3 minutes per side, or until pink and opaque.
  • Serve hot with a squeeze of fresh lemon. Pairs well with salad, rice, or pita.

Notes

To elevate the flavor, marinate shrimp for up to 1 hour in the fridge. Also great served cold over salads or in wraps.
