Instructions
Soak the dried fish maw in water overnight until soft. Drain and cut into bite-sized pieces.
In a large pot, bring the chicken broth to a boil.
Add the fish maw, shiitake mushrooms, and shredded chicken. Simmer for 10 minutes.
Stir in Shaoxing wine, soy sauce, and white pepper.
Slowly pour in the cornstarch slurry while stirring to thicken the soup.
Drizzle in the beaten egg while stirring to create silky egg ribbons.
Garnish with chopped cilantro and serve hot.
Notes
For extra flavor, add a splash of sesame oil before serving. You can also substitute fish maw with other seafood like shrimp or crab meat.
