Main Ingredients

  • 50 g dried fish maw soaked and cut into bite-sized pieces
  • 4 cups chicken broth or pork bone broth
  • 100 g shiitake mushrooms sliced
  • 200 g chicken breast shredded
  • 1 tbsp Shaoxing wine optional, for extra flavor
  • 1 tsp soy sauce
  • 1/2 tsp white pepper
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 egg beaten
  • chopped cilantro for garnish

Instructions
 

  • Soak the dried fish maw in water overnight until soft. Drain and cut into bite-sized pieces.
  • In a large pot, bring the chicken broth to a boil.
  • Add the fish maw, shiitake mushrooms, and shredded chicken. Simmer for 10 minutes.
  • Stir in Shaoxing wine, soy sauce, and white pepper.
  • Slowly pour in the cornstarch slurry while stirring to thicken the soup.
  • Drizzle in the beaten egg while stirring to create silky egg ribbons.
  • Garnish with chopped cilantro and serve hot.

Notes

For extra flavor, add a splash of sesame oil before serving. You can also substitute fish maw with other seafood like shrimp or crab meat.
