  • 2 tbsp unflavored beef-derived gelatine or agar-agar
  • 1/2 cup cold water
  • 3 cups high-quality fruit juice or nectar (pomegranate or mango recommended)
  • 1/3 cup honey or agave nectar
  • 1 tsp pure vanilla extract

Instructions
 

  • Measure the cold water into a small bowl and sprinkle the gelatine evenly over the surface.
  • Allow the gelatine to bloom undisturbed for five minutes.
  • In a saucepan, heat the fruit juice over medium heat until it reaches a gentle simmer.
  • Whisk the bloomed gelatine mixture into the hot juice until it is completely dissolved.
  • Stir in the honey or agave and the vanilla extract until fully incorporated.
  • Pour the mixture into a lightly oiled mold or individual ramekins.
  • Refrigerate the molds for at least 4 hours, or until the dessert is thoroughly set and firm.

Notes

Ensure the gelatine is completely dissolved for a professional, glass-like clarity. If using agar-agar for a vegan option, bring the juice to a boil rather than a simmer to ensure activation. This dessert keeps well in the refrigerator for up to 3 days when covered.
