Ingredients
  

Main Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1 celery stalk diced
  • 4 cups fish or vegetable broth
  • 1 cup diced tomatoes canned or fresh
  • 1 lb white fish fillets cod, tilapia, or haddock, cut into chunks
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper to taste
  • 1 tsp paprika
  • 1 tbsp lemon juice freshly squeezed
  • fresh parsley chopped, for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions, garlic, carrots, and celery. Sauté for 3-4 minutes until softened.
  • Pour in fish or vegetable broth and add diced tomatoes. Bring to a simmer.
  • Season with salt, black pepper, and paprika. Stir well and let simmer for 10 minutes.
  • Add fish chunks and simmer for another 5 minutes, or until the fish is fully cooked and flaky.
  • Stir in fresh lemon juice and adjust seasoning to taste.
  • Garnish with fresh parsley and serve hot.

Notes

For extra flavor, add a splash of white wine or a pinch of red pepper flakes. Serve with crusty bread for a heartier meal!
