white fish fillets
cod, tilapia, or haddock, cut into chunks

Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onions, garlic, carrots, and celery. Sauté for 3-4 minutes until softened.
Pour in fish or vegetable broth and add diced tomatoes. Bring to a simmer.
Season with salt, black pepper, and paprika. Stir well and let simmer for 10 minutes.
Add fish chunks and simmer for another 5 minutes, or until the fish is fully cooked and flaky.
Stir in fresh lemon juice and adjust seasoning to taste.
Garnish with fresh parsley and serve hot.
Notes
For extra flavor, add a splash of white wine or a pinch of red pepper flakes. Serve with crusty bread for a heartier meal!
