Instructions
Heat the discada grill over medium heat. Cook bacon until crispy, then remove and set aside.
In the bacon grease, cook chorizo until browned. Remove and set aside.
Add beef and pork to the disc and cook until browned. Push to the side.
Cook hot dogs until slightly crispy, then mix all meats together.
Add onions, garlic, bell peppers, and tomatoes. Stir well.
Pour in beer, season with salt, pepper, and cumin, then let simmer for 10 minutes.
Serve warm in tortillas with cilantro and lime wedges.
Notes
Discada is traditionally cooked on a plow disc grill, but you can also use a large skillet or wok.
