Ingredients
  

Main Ingredients

  • 1/2 lb chorizo crumbled
  • 1/2 lb bacon diced
  • 1/2 lb beef steak sliced into strips
  • 1/2 lb pork loin sliced into strips
  • 1/2 lb hot dogs sliced
  • 1 cup onion chopped
  • 1 cup bell peppers mixed colors, sliced
  • 3 garlic cloves minced
  • 1 cup tomato diced
  • 1 cup beer for flavor
  • 1 tsp black pepper
  • 1 tsp salt to taste
  • 1 tsp cumin
  • 12 corn tortillas for serving
  • cilantro and lime wedges for garnish

Instructions
 

  • Heat the discada grill over medium heat. Cook bacon until crispy, then remove and set aside.
  • In the bacon grease, cook chorizo until browned. Remove and set aside.
  • Add beef and pork to the disc and cook until browned. Push to the side.
  • Cook hot dogs until slightly crispy, then mix all meats together.
  • Add onions, garlic, bell peppers, and tomatoes. Stir well.
  • Pour in beer, season with salt, pepper, and cumin, then let simmer for 10 minutes.
  • Serve warm in tortillas with cilantro and lime wedges.

Notes

Discada is traditionally cooked on a plow disc grill, but you can also use a large skillet or wok.
