Ingredients
  

Pancake Batter

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 tbsp sugar
  • 2 eggs room temperature
  • 2 cups buttermilk room temperature
  • 1/4 cup unsalted butter melted

Instructions
 

  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  • In a separate bowl, beat the eggs and mix in the buttermilk and melted butter.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  • Heat a griddle or skillet over medium heat and lightly grease with butter or cooking spray.
  • Pour about 1/4 cup of batter onto the griddle for each pancake.
  • Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  • Flip and cook for another 1-2 minutes until golden brown.
  • Serve warm with butter and syrup.

Notes

For extra fluffy pancakes, let the batter rest for 5 minutes before cooking. You can also add chocolate chips or blueberries for a fun variation!
