15 oz, drained and rinsed

boneless, skinless chicken breasts
or thighs

baby spinach

lemon juice

Instructions
Heat olive oil in a large pot over medium heat.
Add onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
Stir in thyme, rosemary, salt, and black pepper.
Pour in chicken broth and add white beans and chicken breasts.
Bring to a boil, then reduce heat and simmer for 20 minutes until chicken is cooked through.
Remove chicken, shred with two forks, and return to the pot.
Stir in baby spinach and lemon juice. Cook for 2 more minutes until spinach wilts.
Serve hot and enjoy!
Notes
For extra creaminess, blend half of the white beans before adding to the soup. Garnish with grated Parmesan for a richer taste!
