  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp black pepper to taste
  • 1 tsp salt or to taste
  • 4 cups chicken broth low sodium preferred
  • 1 can white beans 15 oz, drained and rinsed
  • 2 boneless, skinless chicken breasts or thighs
  • 2 cups baby spinach
  • 1 tbsp lemon juice freshly squeezed

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
  • Stir in thyme, rosemary, salt, and black pepper.
  • Pour in chicken broth and add white beans and chicken breasts.
  • Bring to a boil, then reduce heat and simmer for 20 minutes until chicken is cooked through.
  • Remove chicken, shred with two forks, and return to the pot.
  • Stir in baby spinach and lemon juice. Cook for 2 more minutes until spinach wilts.
  • Serve hot and enjoy!

Notes

For extra creaminess, blend half of the white beans before adding to the soup. Garnish with grated Parmesan for a richer taste!
