Classic Fish and Chips from Harbor Fish & Chips

  • Slotted Spoon or Spider Strainer

Ingredients
  

For the Fish

  • 2 pieces wild-caught cod fillet
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup cold water for batter
  • canola oil for frying

For the Chips (Fries)

  • 2 large russet potatoes for fries

For Serving

  • tartar sauce for dipping
  • lemon wedges optional garnish

Instructions
 

  • Peel and cut potatoes into fries. Soak in cold water for 30 minutes, then drain and pat dry.
  • Heat canola oil in a deep fryer or large pot to 350°F (175°C).
  • Fry potatoes in batches for 3–4 minutes until lightly golden. Drain on paper towels.
  • In a bowl, whisk together flour, baking powder, and salt. Gradually whisk in cold water until smooth.
  • Pat cod dry, then dip into batter, coating evenly. Fry battered fish for 4–5 minutes until golden and crispy.
  • Drain fish on paper towels. Re-fry the fries for 1–2 minutes for extra crispiness if desired.
  • Serve fish and chips hot with tartar sauce and lemon wedges.

Notes

For extra flavor, season the fries immediately after frying with salt and a touch of malt vinegar. Best eaten fresh and hot!
