Ingredients
  

Main Ingredients

  • 1 lb jumbo shrimp peeled and deveined
  • 1 tbsp vegetable oil
  • 1 tsp smoked paprika
  • to taste salt
  • to taste black pepper
  • ¾ cup chimichurri sauce homemade or store-bought
  • 1 lemon for serving

Instructions
 

  • Preheat grill or skillet over medium-high heat.
  • In a bowl, toss shrimp with vegetable oil, smoked paprika, salt, and black pepper.
  • Grill or sauté shrimp for 2–3 minutes per side until pink and slightly charred.
  • Remove from heat and toss immediately with chimichurri sauce until coated.
  • Serve hot with lemon wedges on the side for squeezing.

Notes

For a spicier kick, add a pinch of red pepper flakes to the shrimp before grilling. Delicious served over rice, quinoa, or greens.
