Instructions
Preheat grill or skillet over medium-high heat.
In a bowl, toss shrimp with vegetable oil, smoked paprika, salt, and black pepper.
Grill or sauté shrimp for 2–3 minutes per side until pink and slightly charred.
Remove from heat and toss immediately with chimichurri sauce until coated.
Serve hot with lemon wedges on the side for squeezing.
Notes
For a spicier kick, add a pinch of red pepper flakes to the shrimp before grilling. Delicious served over rice, quinoa, or greens.
