Ingredients
  

Main Ingredients

  • 2–3 boneless, skinless chicken breasts fresh or thawed
  • 2 cups fresh green beans trimmed
  • 2–3 medium russet potatoes peeled and cubed
  • 1 packet Italian dressing seasoning mix
  • 8 tbsp butter cut into cubes
  • to taste salt
  • to taste black pepper

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish or line with foil for easy cleanup.
  • Arrange the cubed potatoes on one side of the pan, green beans on the other, and chicken breasts in the center.
  • Sprinkle the entire dish with the packet of Italian seasoning. Add salt and pepper to taste.
  • Evenly distribute the butter cubes across the top of the chicken and vegetables.
  • Cover with foil and bake for 35 minutes. Remove foil and continue baking uncovered for 15–20 minutes, or until chicken is cooked through and vegetables are tender.
  • Let rest for 5 minutes before serving. Optional: garnish with fresh herbs or grated Parmesan.

Notes

This dish is easily customizable try swapping in sweet potatoes, asparagus, or using a ranch seasoning blend. Great for meal prep and busy weeknights.
