This easy one-pan meal features juicy chicken breasts, tender green beans, and buttery potatoes all baked together with zesty Italian seasoning for a flavorful, no-fuss dinner.
2–3boneless, skinless chicken breastsfresh or thawed
2cupsfresh green beanstrimmed
2–3mediumrusset potatoespeeled and cubed
1packetItalian dressing seasoning mix
8tbspbuttercut into cubes
to tastesalt
to tasteblack pepper
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish or line with foil for easy cleanup.
Arrange the cubed potatoes on one side of the pan, green beans on the other, and chicken breasts in the center.
Sprinkle the entire dish with the packet of Italian seasoning. Add salt and pepper to taste.
Evenly distribute the butter cubes across the top of the chicken and vegetables.
Cover with foil and bake for 35 minutes. Remove foil and continue baking uncovered for 15–20 minutes, or until chicken is cooked through and vegetables are tender.
Let rest for 5 minutes before serving. Optional: garnish with fresh herbs or grated Parmesan.
Notes
This dish is easily customizable try swapping in sweet potatoes, asparagus, or using a ranch seasoning blend. Great for meal prep and busy weeknights.
