Cheesy Stuffed Bell Pepper Bake

Ingredients

  • 4 large bell peppers any color
  • 1 lb ground beef
  • 1 cup cooked rice white or brown
  • 1 cup tomato sauce
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • to taste salt
  • to taste black pepper
  • 1 cup shredded cheese cheddar or mozzarella

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  • Cut bell peppers in half lengthwise and remove seeds. Set aside.
  • In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
  • Add onion, garlic, Worcestershire sauce, tomato sauce, Italian seasoning, salt, and pepper. Cook 3–4 minutes.
  • Stir in cooked rice. Spoon mixture into each pepper half and place in baking dish.
  • Top each filled pepper with shredded cheese. Cover dish with foil.
  • Bake for 30 minutes. Uncover and bake an additional 5 minutes, or until cheese is melted and bubbly.

Notes

Substitute ground turkey or chicken for a lighter version. Add black beans or corn for extra texture and flavor. Leftovers store well in the fridge for up to 3 days.
