Cheese and Green Onion Bread

Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • ½ tsp salt
  • 1/8 tsp cayenne pepper optional
  • 3 tbsp sugar

Fat & Cheese

  • ¼ cup cold butter cubed
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup shredded mozzarella cheese
  • 1 green onion finely chopped

Wet Ingredients

  • 2 large eggs
  • 1 cup milk

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line a 9x5-inch loaf pan.
  • In a large bowl, whisk together flour, baking powder, salt, cayenne pepper (if using), and sugar.
  • Cut in the cubed cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Stir in the cheeses and chopped green onion.
  • In another bowl, whisk together eggs and milk. Pour into dry ingredients and stir until just combined do not overmix.
  • Pour batter into prepared loaf pan and smooth the top.
  • Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

This bread is best served slightly warm or toasted with butter. Store leftovers wrapped in foil or an airtight container for up to 3 days.
