Brownie Mix Cookies

These rich and fudgy brownie mix cookies are the perfect combination of a brownie and a cookie-chewy, soft, and incredibly easy to make!

Ingredients
  

Cookie Dough

  • 1 box brownie mix 18 oz box
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tbsp water
  • 1/2 cup chocolate chips optional

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the brownie mix, vegetable oil, eggs, and water. Stir until a thick dough forms.
  • Fold in the chocolate chips, if using.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
  • Bake for 8-10 minutes, or until edges are set but centers are slightly soft.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Enjoy warm or store in an airtight container for up to 3 days.

Notes

For extra fudgy cookies, slightly underbake them and let them set on the baking sheet. Add a sprinkle of sea salt for a gourmet touch!
