Remove from heat and add dried butterfly pea flowers and sliced ginger. Let it steep for 10 minutes.
Strain the mixture to remove flowers and ginger.
Stir in lemon juice, apple cider vinegar, and honey (if using). The drink will turn from blue to purple.
