Ingredients
  

Main Ingredients

  • 4 medium apples Fuji, Honeycrisp, or Granny Smith
  • ½ cup feta cheese crumbled
  • ¼ cup dried cranberries chopped
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp fresh thyme leaves optional
  • to taste salt
  • to taste black pepper
  • chopped walnuts for garnish (optional)

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • Core the apples, removing seeds and a small amount of the center to create room for filling. Leave the bottoms intact.
  • In a bowl, mix feta, chopped cranberries, olive oil, thyme, and a pinch of salt and pepper.
  • Spoon the filling into each apple cavity. Drizzle each apple with honey.
  • Place apples in baking dish and bake uncovered for 20–25 minutes, or until tender but not collapsing.
  • Top with chopped walnuts (if using) and an extra drizzle of honey. Serve warm or at room temperature.

Notes

Best served warm. Try using goat cheese instead of feta for a tangier twist. Great as a side with pork or a festive vegetarian starter.
