Description

Ingredients
– 1 tbsp olive oil
– 1 onion, diced
– 2 garlic cloves, minced
– 1 tbsp grated ginger
– 1 tsp turmeric powder
– ½ tsp cayenne pepper (optional)
– 4 cups vegetable broth
– 1 cup chopped carrots
– 1 cup chopped celery
– 1 cup broccoli florets
– ½ cup quinoa (rinsed)
– 1 tbsp apple cider vinegar
– Juice of 1 lemon
– Salt and pepper to taste
– Fresh parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Sauté onion, garlic, and ginger for 3-4 minutes until fragrant.
3. Stir in turmeric and cayenne pepper, cooking for 1 minute.
4. Add vegetable broth, carrots, celery, broccoli, and quinoa.
5. Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables and quinoa are tender.
6. Stir in apple cider vinegar and lemon juice.
7. Season with salt and pepper to taste.
8. Serve hot, garnished with fresh parsley.

– Use bone broth for added protein.
